Vinification	Harvested in the house in mid-August, gently pressed to extract only the flower must then vinified at controlled temperature. This is followed by a first refinement in steel on its fine lees until draft, performed with the new spring moon. Then follows the refermentation in the bottle and the long aging in stacks until the disgorgement.
